We received our final approval in October and quickly fired up the still! Jim C. and Jim D. spend most days (and some nights) in the distillery now, honing their skills. Some very sweet smelling apple distillates have already come off the still
IT'S FEDERALLY PERMISSIBLE!!! Of The Earth Farm Distillery can legally distill! The first permit hurdle is achieved! Next stop the State. Of The Earth is halfway through the apple harvest, and the permit comes just in time to start off with several batches of Gala mixed with several hard cider varieties such as Redfield. After picking and washing, these fresh crispy and flavor filled fruits go through a crusher and into the fermenting tanks with a little yeast. What is the valuable yeast byproduct we seek? Why, its the defecation of yeast cells. Yep, alcohol and the aromatic compounds of the fruit itself after run through the still create a beverage Here's a shot of fermenting on the skins, 7 days in. Those fabulous microbes are chomping away at the sugars and in high gear reproducing under that brown cap. Yeast cells, living the life. Just a shot of the centerpiece equipment after dark and framed by the window. The still consists of a pot on bottom and the top of the pot you will see an atypical head (fruit distillations) with a lentil (not used for the fruit distillation). The lentil will come in handy for some wintertime exploration of some out of the ordinary grain distillates.

Having grown up on a hog farm, I have a special appreciation for our Porcine Friends and I enjoy recognizing this holiday....it is a national holiday, the internet says so. ;-)
Almost there. The Smith masons will be pouring a top for the copper pot to nestle down into. Step two, Steve, Nathan and Justin of Smith Masonry start putting that thing together. The base for the firebox. It's been a sleep year for Of The Earth with the exception of fruit shares. But, for 2012 things are gonna be a changin'. (my apologies to the songwriter) The first piece of equipment for the production of a new product has landed. It all seems to fit.

There has been a bit of a shake up at Of The Earth and if it's not obvious, the retail aspect of the operation has stopped operation. In other news we have started building an earth contact high tunnel with the help of SARE grant monies. We will be exploring raspberry production in it for next year. |
