Of The Earth is halfway through the apple harvest, and the permit comes just in time to start off with several batches of Gala mixed with several hard cider varieties such as Redfield. After picking and washing, these fresh crispy and flavor filled fruits go through a crusher and into the fermenting tanks with a little yeast. What is the valuable yeast byproduct we seek? Why, its the defecation of yeast cells. Yep, alcohol and the aromatic compounds of the fruit itself after run through the still create a beverage Here's a shot of fermenting on the skins, 7 days in. Those fabulous microbes are chomping away at the sugars and in high gear reproducing under that brown cap. Yeast cells, living the life. Just a shot of the centerpiece equipment after dark and framed by the window. The still consists of a pot on bottom and the top of the pot you will see an atypical head (fruit distillations) with a lentil (not used for the fruit distillation). The lentil will come in handy for some wintertime exploration of some out of the ordinary grain distillates.
