Distillery
In 2008 Jim D. began investigating ways to add value to the annual fruit crop. He encountered Eau de Vie, translated from French as "Water of Life". As a home winemaker, he was drawn to this segment of the spirits industry and another passion was ignited. Since that discovery, he has pursued ways to bring fresh, locally made, spirits to the Ray County area.
The still arrived from Portugal in January 2012. Permits were filed with the Federal Government, the State Government and Ray County. We were able to gain approval and fire up the still for the first time in October 2012.
Apple Brandy from an assortment of our apples was the first product off of the still. We continue to expand our offerings, as connections for more local products increase and our knowledge of distilling expands.
Spirits Currently Available
Apple Brandy - in season apples from our own orchard are used to make a clear distillate that fills the senses with the aroma of fresh apples. Aging in Missouri white oak adds depth to these flavors on the palate
Ray County Rye - a smooth whisky aged in Missouri white oak. Strong herbaceous aromatics blend with the savory notes of green pepper and a sweet hint of caramel to give this spirit a long satisfying finish. Rye grown in Ray County Missouri is used in each batch
Grappa - our most distinct spirit has origins in Italy and is made from Baltimore Bend Winery pomace
Blackberry Liqueur - blackberries sourced from the Mule Barn Berry Patch in Lathrop
Rye Eau de Vie - made from pomace provided by Baltimore Bend Winery near Waverly
Pommeau - our apples are used to make apple spirits and juice, the two are then blended together and aged in a recycled apple brandy barrel
