The Pork
The making of spirits presented Of The Earth Farm + Distillery with an opportunity to turn the ‘waste’ mash into excellent meats. We start with heritage breed pigs from small, local farms. These feeder pigs come to the farm and go to our pastures where they happily root into the soil and eat grass while dining on cracked grains and side dishes of spent mash. Today it might be a steaming apple mash and tomorrow it might be the spent grains from rye whiskey fermentation. This diverse diet, sunshine and clean air means happy, healthy hogs.
Of The Earth Farm + Distillery invites you to take a bundle home. Pour yourself a rye neat and enjoy our pork your favorite way in the oven, on the grill, or in the skillet. Pork can be purchased at the City Market in Kansas City and on the farm every Friday, Saturday & Sunday from 2pm-8pm. Half and whole hogs may be reserved with a deposit using THIS FORM. |
The Lamb
Katahdin sheep are a breed of hair sheep developed by Michael Piel of Maine. Piel imported hair sheep from Africa and crossbred them to Tunis, Southdown, Hampshire, Suffolk, Cheviots and other "Down" breeds until he had reached his goal of a meat sheep that did not require shearing.
Piel selected for a hair coat, meat-type conformation, high fertility, and good flocking instincts. The resulting composite breed was named Katahdin and are ideal for pasture lambing and grass/forage based management systems. Ewes usually have twins, occasionally producing triplets or quadruplets. Of The Earth Farm + Distillery chose Katahdin sheep for their low maintenance and superior meat quality. The growing flock rotates through the pasture and orchard with their bodyguard, Simon the livestock guardian dog. Lambs are born in May to maximize the benefits of the lush spring grass for the lactating ewes. The lamb is sold in cuts at the Kansas City Farmers Market and on the farm. Half and whole lamb can be reserved with a deposit using THIS FORM. Bookings for half and whole lambs are being accepted now. |
The Orchard
Currently the orchard houses 26 varieties of apples, 2 varieties of Asian pears, and 2 varieties of peaches over a total of 7 acres. The new orchard, featured here, will provide additional varieties of apples & pears.
U-PICK APPOINTMENTS | Come out to the orchard & pick your own fruit - it is excellent for juicing, making pies, canning or eating fresh right off the tree.
